Okra is a nutritious and tasty vegetable. With A, C, K, vitamin B 6 It also contains Folate, Calcium, Magnesium, Manganese Protein,  Riboflavin, Niacin, Phosphorus, Potassium, Zinc and Copper, and a very good source of Dietary Fiber.
It is said to improve vision and boosts immunity.
It is best to consume it raw. Okra can be crisp fried and stir-fried. It can be made into pickle, stew, soup, curry and many more. It can also be grilled and roasted. It can be stuffed and steamed.
Today I am going to make   Simple Ladies finger (okra)mild curry with coconut milk.

Preparation

1. Use a kitchen paper towel and wipe out the little white fibrous growth found on the outer skin of 700 grams of okra. Wash the okra well in running water. Wipe the water with kitchen towel and make it dry.

2.Cut the okra into 1¼ inch slices. 

3.Wash and cut 2 tomatoes into ½ inch pieces.


Ingredients

Method

In a pan add okra, tomatoes, coarsely chopped 1 onion,
chopped ½ sprig curry leaves, coarsely chopped 3 cloves garlic, sliced 1 green chilli,  ½ teaspoon fennel seeds, ½ teaspoon salt.

2.  Add one and half  cup of water just to cover the vegetables. 

3. Cover and bring to boil. Reduce heat and let it simmer for 10 minutes. If you want it crispy you can reduce the time.
Just before adding milk

4.Taste for seasoning.

5.Add ¼ cup coconut milk. and ½ teaspoon pepper. Cook for 2 minutes and remove from fire. 

6.Just before serving add 2 table spoon lemon or lime juice.
Final curry

Serve with rice.

Main
700 grams okra sliced into 1 inch pieces
2 tomatoes sliced into ½ inch pieces
Others
1 onion chopped coarsely
½ sprig curry leaves
3 cloves garlic
1 green chilli sliced into small pieces
½ teaspoon salt
¼ cup coconut milk.
2 table spoon lemon or lime juice 
Spices
½ teaspoon pepper powder
½ teaspoon fennel seeds

Preparation
Use a kitchen paper towel and wipe out the little white fibrous growth found on the outer skin of the okra. Wash the okra well in running water. Wipe the water with kitchen towel and make it dry.
This process will stop oozing of gummy, gelatinous liquid. Cut the okra into 1¼ inch slices.

Wash and cut tomato into ½ inch pieces.

Method
Add all the prepared ingredients except pepper and coconut milk with one and half  cup of water just to cover the vegetables.

Cover and bring to boil.
