Spicy vegetarian lamb curry
we are familiar with mutton curry made from lamb. Vegetarians cannot have a taste of it. But today modern technology has provided vegetarian lamb made from soy protein, or textured vegetable protein (TVP), in the form of powder or wheat gluten, which has a stretchy texture that can be easier to modify so it resembles the chewiness of meat. So here I am with a vegetarian lamb to make a lamb curry for the vegetarians.

1 big onion
3 cloves garlic
15 grams ginger
1 green chili
1 sprig curry leaves
1 big tomato
1 teaspoon salt
2 cups water
1/4 cup coconut milk
2 table spoon vegetable oil
Spices
1 table spoon curry powder
1 tea spoon coriander powder
1/2 tea spoon turmeric powder
1/2 tea spoon chili powder
1 teaspoon biryani powder
2 pods cardamom
2 inches cinnamon
5 cloves
Preparation
Cut vrgetarian lamb into bite size pieces
Method
Heat a wok or a pan, add 2 table spoon oil and heat it . Add 2 inches cinnamon, 2 pods cardamom, 5 cloves and 1 dry chili. Fry till you get fragrance. If you like you can add pandan leaves and lemon grass. Add 1 chopped onion and fry for 10 minutes and add 1 sprig chopped curry leaves. Add 1 chopped tomato and fry for 2 minutes.Add chopped 3 cloves garlic and 10 grams finely cut ginger and fry for 2 minutes. Add lamb
and stir fry for 3 minutes. Add 1 table spoon curry powder, 1 tea spoon coriander powder, 1/2 teaspoon turmeric powder, 1/2 tea spoon chili powder,1 teaspoon biryani powder. Now add 2 cups water and 1 teaspoon salt. Cover and bring to boil. Once it boils reduce heat and simmer for 10 minutes.
Now add 1/4 cup coconut milk and cook uncovered for 3 minutes. Curry is ready. taste for seasoning.

Heat a wok or a pan, add oil and heat it. Add cinnamon, cardamom, cloves and dry chili fry till you get fragrance. If you like you can add pandan leaves and lemon grass. Add onion fry for 10 minutes and add curry leaves.
